The Restaurant
Type: ecosystem
OVERVIEW1 BRANCHES
PROBLEM
Everyone has to eat. Not everyone has to know what they ate.
SOLUTION
The Restaurant is the MTREES mall dining ecosystem — a full-service experiential consumption environment operating at the precise intersection of hunger, ambient lighting, and the suspension of critical inquiry that occurs when a bread basket arrives before anyone has looked at the menu. The Restaurant does not have a cuisine. The Restaurant has a concept, which is explained by the server in a way that takes longer than the explanation warrants and ends with the server asking if you have any questions, which you do, but the server has already left. The kitchen is open, in the sense that you can see into it, which the Restaurant considers transparency. The menu changes seasonally, which means the thing you came back for is no longer available, which the server describes as 'exciting.' Reservations are recommended. Walk-ins are accepted. Neither group is seated immediately. The Restaurant's signature offering is Monkey Brains, which is listed under Specialties, which is the section of the menu that does not have prices.
